With Christmas just around the corner, here’s a fabulous, healthy way to use up your turkey leftovers, in wraps with pure maple syrup.
While both white sugar and maple syrup are mostly sucrose, maple syrup is lower on the glycemic index, which measures how quickly your liver metabolizes the carbohydrates into glucose. Refined sugar spikes your blood sugar level and causes a release of insulin. Natural sugars do this, too, but not as dramatically.
Unlike table sugar, which has no nutritional value, maple syrup has trace amounts of most necessary vitamins and minerals and high levels of manganese, riboflavin, zinc, and calcium, as well as amino acids.
Just be sure you’re getting the real thing. In order to be marketed as “maple syrup” in the US, it must be made almost entirely of maple sap. Syrup products that contain mostly high fructose corn syrup can be bottled in a similar way or even say “no sugar.” Real maple syrup is more expensive, but worth it.
Roasted Maple Turkey Wraps
-20 lb. turkey
-3 c. apple cider
-½ c. maple syrup
-2 T. fresh thyme
-2 t. marjoram
-3 t. lemon zest
-1 c. butter
-3 c. chicken stock
-2 bay leaves
-2 c. toasted pecans
-3 c. chopped onion
-1 c. chopped celery
-1 orange, chopped
-1 apple, chopped
-1 garlic clove, chopped
Boil cider and syrup until reduced by half. Remove from heat. Mix in the thyme, marjoram, lemon zest, and bay leaves. Add butter and stir until melted. Refrigerate until chilled.
Toast pecans for 10 minutes at 350 degrees. Cool.
Pour chicken stock into the bottom of a roasting pan and set the turkey in it. Stuff with orange, apple, onion, celery, and garlic.
Pour cider/syrup mixture over the turkey. Top with toasted pecans. Cook at 325-350 degrees for 20 minutes per pound, basting every 15 minutes until turkey reaches 165 degrees on a meat thermometer.
This is so good on its own there is no need for gravy! The next day:
-½ c. plain Greek yogurt
-2 T. maple syrup
-½ t. sea salt
-Dash of ground pepper
-Six 6-8 inch tortillas
-Bibb, butter, or green lettuce, shredded
-Sweet onion, sautéed
Mix the dressing ingredients until combined. Dice the turkey, add lettuce, cheese, apple, avocado, carrots, and onion. Place in tortilla and top with or dip into dressing.
